This is indeed an odd one....
My best guess is that the reason your wifi is disconnecting is that the tablet is rebooting and therefore resetting the wifi adapter.
As to discovering why its rebooting is a process of elimination. Was there a particular application you installed that caused this behaviour? My advice would be to uninstall apps one at a time until the rebooting stops, or reset it back to factory and install apps one at a time until it starts doing it.
One thing I have noticed is that SO have preinstalled "advanced task killer" as a system app. Personally I think task killers are worthless. It does run in the background if left at default settings - you will be unable to actually uninstall it but you can stop it running - Go into its settings and disable all the real-time functions.
